How to Make Spatzle, Tiny German Dumplings

Before the invention and use of mechanical devices to make these noodles, they were shaped by hand or with a spoon and the results resembled Spatzen (German plural of Spatz, meaning sparrows, sparrow is Spatz) which makes a lot of sense when you consider their shape. This recipe makes 2 portions: 1/2 cup all-purpose flour, plus more to adjust, 1 large egg, 1/2 teaspoon kosher salt, 1 tablespoon cream fraiche, sour cream, or yogurt and 3 tablespoons milk.
